Since my skinny strawberry shortcake last week was such a hit (and it’s still strawberry season of course) I wanted to find another way to make a delicious recipe using them. I’ve had versions of strawberry salads in restaurants before and didn’t like them too much because they are always too sweet. But I experimented a little and I came up with a perfect delicious and healthy version of my own! Hope you enjoy!


What you will need:

baby spinach
1 or 2 cups of sliced strawberries
red onion
1 avocado
1 lemon
olive oil
balsamic vinegar
dijon mustard
feta cheese
1/3 C slivered almonds


The first thing I did was to slice some red onion very thin. These particular onions were a little strong for my taste so I rinsed the slices in cold water then put them in a bowl with ice cubes. I let this sit in the fridge for about an hour. This will tame the flavor. You could also add some balsamic to the water and can do this the night before and just leave in the fridge. I love onions in salad and I usually use green onions since they are milder.



For the dressing:

3 to 4 T olive oil
1T balsamic vinegar
2 teaspoons dijon mustard
1/2 to 1 teaspoon of agave syrup or honey (you don’t need much so taste)
1 to 2 teaspoons of lemon juice

Mix all ingredients together. Add some cracked pepper. I didn’t add salt at this point because I like to season my salads when I am mixing them. Don’t leave out the lemon though. It really adds to this dressing. Just squeeze some in until you have the taste you like.


I decided to toast the almonds. You can do this in the microwave quite easily. Spread almonds on a paper plate.. Add just a drizzle of olive oil and mix. Microwave for one minute, then stir. It took about 4 minutes in my microwave, but I stopped at each minute to mix the almonds. You don’t want them burn them, so keep checking.


Slice your strawberries and avocado. Now you have all your ingredients ready.


Put all the ingredients in large salad bowl.. Add salt and cracked pepper to taste and sprinkle on some feta cheese. Mix it all together and your done!


This was so delicious that I made it 3 times this week! I made it with red and green leaf lettuce one night and used green onions instead of red. The next night I tried some crumbled blue cheese and chopped pecans. All were amazing! Hope you enjoy!
