I got such a wonderful response last week to my first Sunday “healthy cooking” post I was really excited to share another favorite with you.
I don’t get to eat breakfast often- I’m always rushing late in the mornings- so when I do have the chance sometimes I like to indulge a little. The reason I say just a little is because these pancakes are a delicious and healthy alternative to regular pancakes.
For me pancakes were that mouth-watering breakfast I loved as a child, but then as I got older and became more concerned with being healthy and staying thin I ruled them out of my diet completely- as just sugar and fat. But not anymore- these I actually feel good about eating :) I have to thank my mom who shared this recipe with me!


Oatmeal Yogurt Pancakes

What you’ll need:
1 1/4 cup quick cook oatmeal
1 cup greek yogurt
1 cup low or non fat milk
1 tablespoon honey or agave nectar
1/2 cup whole wheat flour
1 tsp baking soda
1/2 tsp salt
whites from 2 eggs

Makes 4 servings or about 12 pancakes


It’s really easy- you guys know I like easy. Anything too difficult to cook it’s not for me.
In large bowl mix together oats, yogurt, milk and agave nectar or honey.
Stir in flour, baking soda, and salt.
Whisk egg whites and add to pancake mixture.
Lightly spray cooking spray or rub a small amount of olive oil on the griddle or pan and flip the pancakes when they begin to bubble.

Chop your favorite fresh fruit on the top and if you like nuts, you can add chopped walnuts to the batter from the beginning.
Add an organic 100% berry sauce (no syrup here friends!) and voila you’ve made a healthy, delicious breakfast.

The thing that is so great about these pancakes is theres no butter, no oil, and if you choose to use non fat milk and fat free greek yogurt almost absolutely no fat as well.
The only sugar is natural- agave and fruit.
It’s nice to eat something delicious you can feel happy and healthy about.

And p.s. don’t worry about making too much because you can easily wrap them up in the fridge and heat them up the next day. That’s what I always do!
