Happy Sunday Everyone! Hope you’re in the mood for one of my favorite quick and healthy meals!! :) Sweet and Crunchy Chicken Salad. I eat this for lunch multiple times a week. I actually used to buy it already made from one of my favorite deli’s in LA, but it started getting expensive when I was craving it everyday. I realized I could make it on my own for super cheap and it tastes just as good (if not better!) Of course homemade is always best for you!

What you will need:

2 C chicken (3 boneless breasts)
2-3 stalks celery
1 small bunch red grapes (or apple or both)
1/2 red onion
sliced almonds
1 lemon or lemon juice
pineapple nectar or juice
agave nectar
salt
cracked pepper

First we’ll get all our ingredients ready. Cut chicken into bite sized cubes. (I used 3 grilled chicken breasts but you could use any type of chicken you wish. If you don’t have time to grill yourself, get some at the market that is already cooked.) Chop onion and celery. Rinse, dry and quarter grapes.

Next the dressing. Pour about 3 T olive oil into a small bowl. Add a few T of pineapple nectar. (I have juice pictured here since my market was out of nectar but I prefer nectar since it is thicker, you could even try crushed pineapples. Squeeze in some lemon juice. Add a drizzle of agave nectar if you want it a little sweeter. I always recommend tasting your dressing as you add ingredients. It’s all about having it taste the way you like it.

Put everything into a large bowl, mix, add dressing and salt and pepper to taste. As always with my recipes…so easy! You could use an apple instead of grapes and any type nuts you like so experiment! If you’d like it creamy add a tablespoon or so of greek yogurt. I placed this on a few leaves of red lettuce with some of my favorite crackers and it was a perfect light lunch. This makes about 3 servings so figure one chicken breast per person. Hope you enjoy!
