Since Cinco De Mayo is next weekend and many of you might be attending or throwing little fiestas in honor of the Mexican holiday I wanted my Sunday Skinny Bites post to be Mexican themed- what better than the perfect homemade salsa, guacamole and margaritas?!
What you will need for the salsa:
8-10 roma tomatoes ( I use romas because they are firm and will hold up without getting mushy)
1 bunch green onion or one medium white onion
1 bunch cilantro
1 green, red or yellow pepper
1 Anaheim or banana pepper
2-3 jalapeno peppers
cider or white vinegar
3-4 cloves garlic (chopped)
(If you’re making the guacamole- 5 ripe soft avocados)
It’s SO easy (of course that’s how we like it!) Get all your ingredients ready. Rinse and dry the cilantro. Chop onions, tomatoes, peppers and garlic. Taste your jalapenos to see how hot they to help determine how much you will need. Remember the seeds are the hottest part so if you like your salsa hot- more seeds.
Put everything in a large bowl. Drizzle on some olive oil, squeeze on the fresh lime juice and a few splashes of vinegar. Season with salt and cracked pepper. I always add a little chili powder and cayenne pepper. And of course a lot of cilantro!
Mix everything together and put in a covered container in fridge. It’s best to make the day before so the flavors will have time meld.
Once you’ve got this made, you can also have the best guacamole in 2 minutes. All you do is smash up about 5 avocados, add half a cup of the salsa you just made and some lemon salt and pepper.
A great way to kill two birds with one stone!
For the Perfect Classic Margarita:
Alcohol can absolutely ruin an otherwise perfectly healthy diet. It’s not having a drink or two with friends now and then that’s the problem- its all the sugar and junk they mix into those Strawberry Mango Frozen Margaritas you are ordering. The calories add up like crazy.
A true margarita should be very simple. All you need is:
1 oz premium tequila (my favorite is Herradura!)
1/2 oz Cointreau or Gran Gala
1.5 oz fresh-squeezed lime juice
and a splash of fresh orange juice to taste.
Put everything in shaker with a cup or so of ice and shake it up. Add some lime slices for garnish.
If you like strawberry or mango buy a few fresh fruits and chop them up into small pieces and muddle them (google muddle if you don’t know) at the bottom of your glass. Voila that’s all!
