Healthy Treat: Chocolate Coconut Chia Pudding

  • This is a great desert to satisfy your sweet cravings without adding lots of sugar and calories. Chia seeds are one of the healthiest foods on the planet. They contain healthy omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium. Chia seeds are a unprocessed whole grain food that can be absorbed by the body as seeds (unlike flaxseeds which must be ground). They swell up and form a gel when mixed with liquids. They are delicious when paired with fruits and are perfect for desert or breakfast. If you haven’t tried this powerhouse yet give this simple recipe a try.

  • Ingredients:

    1/4 C chia seeds
    1 C vanilla almond milk
    1/4 C Greek yogurt
    1T cacao powder
    1T dehydrated coconut
    1/8 tsp salt
    1/8 tsp cinnamon
    pure stevia to taste (you can use another sweetener such as agave nectar or honey)
    fruits for topping

  • In medium bowl thoroughly whisk together all ingredients except yogurt. Chia seeds will start to gel.

  • Stir in the yogurt. Cover bowl with plastic wrap and place in fridge for a hour or overnight. I usually make mine the night before. You can also pour pudding directly into the serving dishes that you are going to use. Top with the fruit of your choice and enjoy! For breakfast I pour on more almond milk and top with fruits. Get creative with your toppings: you can add nuts, seeds or shredded coconut.

  • Makes 3-4 servings

    I love to eat chia seeds and they’re really good for your body. I usually put them in a breakfast smoothie with fruit, spinach, greek yogurt, milk, and honey but I will definitely try this!
