Chocolate Almond Butter

  • My Favorite Chocolate Splurge

    No matter how strict you are with your diet, it’s hard to not crave a little chocolate sometimes. This amazingly delicious, nutritious and easy chocolate almond butter does the trick when it comes to my sweet cravings. Almonds contain heart healthy unsaturated fat and they are a good source of vitamins and minerals. If you don’t have a food processor, buy or borrow one to make this. It’s that good!

  • What you will need:

    2 cups almonds (I use roasted)
    1/2 cup dark or semi-sweet chocolate chips
    1 tsp coconut oil
    1/4 tsp salt
    1 tsp honey (optional) or a few pinches of stevia (for no added sugar)


  • Put 2 cups of almonds in a food processor and process for around 15 minutes, scraping sides with spatula a few times. It’s amazing to see the first time you make this. It turns into a dough ball at first and then 5 minutes later it’s butter!


  • While your almonds are processing, put the chocolate chips into a small pan with 1 tsp of coconut oil and melt over low heat. (throw a few more chips in if you want!)


  • Almonds are done when they are nice and creamy. You could stop here and just add some salt and have plain almond butter which is delicious too.


  • Pour in the melted chocolate and blend. Add the salt to taste and blend again. Add a bit of honey if desired.

    That’s all there is to it! Pour into a jar and keep in refrigerator. This makes about 1 1/2 cups. The jar I used was 13 oz and I filled it to the top with even a little extra left over. This will become firm when chilled so if you want to use it as a syrup just pop some in the microwave as needed. I love using this as a dip with fruit. It would work well with most any fruit.. My favorites are apples, strawberries or bananas. Also when melted it’s a great topper for low fat frozen yogurt.
