Easy Chilled Cucumber Soup

  • Along with gazpacho this is my favorite chilled soup. Summer is the time for eating light and this soup is perfect. The key to making a good cucumber soup is adding ingredients that will make it flavorful, yet still retain that clean refreshing cucumber taste. This soup is so easy to make and works as a appetizer or main dish. If you like cucumbers definitely give this a try.
  • What you will need:
    2 English cucumbers (approx 2 1/2 cups)
    1 medium zucchini (1/2 cup)
    2 green onions
    1 ripe avocado
    1 or 2 garlic cloves
    2 cups Greek or plain yogurt
    1/2 cup chicken broth
    2 or 3 teaspoons Dijon mustard
    2 tablespoons fresh lemon juice
    2 or 3 tablespoons chopped dill
    salt to taste
  • Peel and chop cucumbers and zucchini. I peel in strips to leave a little of the green. Chop onion, dill and avocado. (I usually add a few tablespoons of chopped parsley but I forgot it while shopping. I decided against using dried. It was delicious with just the dill.)
  • Set aside about a cup of the cucumbers (finely chopped) to mix in later. Place the remaining vegetables, dill and onions, along with 1 or 2 cloves of garlic in a food processor and puree until smooth.

     

  • In a large bowl combine the Greek yogurt with the chicken broth. Add the Dijon mustard, lemon juice and 1/2 teaspoon of salt.
  • Pour the yogurt mixture into the food processor and puree a little more.
  • Taste and add more salt if necessary. You can also add more dill, garlic or lemon to suit your taste. Pour into a large bowl and stir in some of the chopped cucumber that you have set aside. Cover and refrigerate for 1 or 2 hours. It just get tastier the longer it sets.
    Garnish with chopped cucumbers, dill and fresh limes. Croutons are another good garnish and this is delicious with cold or grilled shrimp. Makes 4 to 6 appetizer servings or 2 to 3 dinner sized.
