Mixed Greens Salad with Quinoa, pistachio, and Pomegranate Seeds

This is such a beautiful and delicious salad and the festive colors make it perfect for the holidays. With Christmas right around the corner (hello in 3 days!) this is a perfect last minute addition to your holiday meal.
What you will need:
3 C Baby arugula (or large handfuls)
3 C Romaine Lettuce
1/2 C cooked quinoa
1/4 -1/2 red onion (sliced thin)
1/4 C chopped pistachios or almonds
1/2 to 1C pomegranate seeds
1/2 t chicken bouillion
2 t. honey
2 t Dijon mustard
1/2 C olive oil
1/3 C white wine vinegar
1 t salt
1/2 t cracked pepper
Rinse and drain quinoa in mesh sieve. Rinsing will take away the bitterness. Many recipes call for a 1 to 2 ratio of 1 C quinoa to 2C water. I find this too mushy since I like my quinoa light and fluffy. I use a 1 to 1 1/2 ratio, so 1/2C quinoa to 3/4C water. Combine quinoa and water in medium saucepan and bring to a boil. Add 1/2 tsp chicken bouillon. Stir. Cover and reduce heat. Simmer for about 15 minutes until liquid is absorbed. Quinoa is done when each grain has popped or opened. Remove from heat, fluff with a fork and set aside to cool. This will yield about 1 1/2 cups cooked quinoa so you can add more if you like.
Whisk together honey, mustard, olive oil, vinegar, salt and pepper. You can also measure the ingredients in a jar, screw on the lid and shake.
Slice onions. (If they are very strong you can soak in ice water with a few tablespoons of vinegar for 15 minutes or so) Chop nuts, rinse and spin lettuce and arugula and tear into bite-sized pieces. Remove seeds from pomegranate. This can be easily done by cutting the pom in half, immersing in a bowl of cold water and then breaking it apart. The seeds will come right out and there is no mess. Strain the seeds. (You can find a video on YouTube that shows the exact process. It’s so easy)
Put all ingredients except quinoa into a large salad bowl. Drizzle on dressing and mix.
Add quinoa. Taste and add more seasonings if necessary. Feel free to add more pomegranate seeds, nuts or quinoa if you wish. It’s all up to your preference. This salad is definitely a hit. The dressing is divine! Makes approx 4-5 servings. I usually measure my greens about one large handful per person so adjust this recipe to meet your needs.
