Broccoli is one of the most nutritious, good-for-you, foods out there. So since we are all about health here I wanted to share with you one of my favorite raw broccoli recipes. This raw broccoli salad is great as a side dish or a light lunch and is always at hit at parties.
Here’s what you will need:
3 heads of broccoli with stems or 1 bag of store bought broccoli slaw
1/2 red onion
cranberries or raisins
juice of two lemons
honey or agave nectar
salt and pepper
Chop carrot and onion. Rinse and chop broccoli florets. ( If you are using store bought broccoli slaw it doesn’t have florets so I always add them. You only need one broccoli crown.)
If you use store bought broccoli slaw make sure to buy a good quality one. Trader Joes and Sprouts have nice slaw. I decided to make this from scratch using a food processor to shred the broccoli stems. Cut off woody bottoms of stems and peel any dried areas. Cut them to fit in the chute of the food processor.(use the blade with the holes in it). It works amazingly well. Chop the florets by hand since they don’t work well in the processor. Chop as much as you like in the salad. Leftover crowns can be used for another meal.
For the dressing mix together:
Juice of 2 lemons (about 1/4 cup)
2 teaspoons Dijon mustard
2 teaspoons honey or agave nectar
3 tablespoons olive oil
2 cloves garlic minced or use garlic press
Put everything in a large bowl and drizzle on some dressing. Mix. Add salt and cracked pepper taste.
You could also add any type of nuts you like. The dressing is so delicious and the cranberries add the perfect touch. This makes about 4 servings.
