Rotisserie chickens are such a time saver. You can make easy and delicious meals in no time. I pick one up at my local market at least once a week. One of my favorite ways to use them is in salads. They can turn a boring salad into a satisfying, healthy meal. This is one of my favorite salads. It’s a stand alone salad that really satisfies your hunger.
What you will need:
1 rotisserie chicken
Small red or fingerling potatoes (1/2 to 1 pound)
Mixed greens of your choice
2 hard boiled eggs
3 or 4 chopped green onions or thinly sliced red onion
1/2 C olive oil
3 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1 clove garlic (minced or pressed)
1 tsp cracked pepper
few squeezes fresh lemon (optional)
Bring potatoes to boil in medium sized pot. Reduce heat to a simmer, cover and cook for 20 minutes or so depending on size of potatoes. Check to make sure potatoes are not getting too soft. Drain and set aside to cool.
Bring eggs to a boil turn off heat and cover. Let set for 10 minutes then rinse with cold water and set aside to cool. Remove meat from chicken and cut or break into bite sized pieces.
Mix together all ingredients for salad dressing.
Put chicken, potatoes, green onions in a large bowl. Pour on the salad dressing until everything is coated and mix gently. Transfer to a smaller bowl.
Place greens in the large bowl and add a small amount of the dressing. Toss gently then place the greens on plates and top with the chicken mixture. Slice boiled eggs in half and place on each plate.
Since this salad is so filling it is perfect to serve for lunch or dinner. You can make the chicken/potato mixture ahead of time and store in the fridge for a few days.
