Slow Cooker Zucchini Chicken

  • I decided to make another slower cooker recipe since the white bean chili turned out so good. I’m always looking for things that are easy to make as I’m always on the go. This one is stove top friendly if your don’t have a slow cooker. Just turn to low and let it simmer until the chicken is tender.

  • What you will need:

    2 large chicken breasts (3 or 4 if small)
    3 zucchini (cut into 1 inch pieces)
    2 stalks celery (chopped)
    1 small onion chopped
    2 bell peppers sliced (any color)
    2 cloves garlic (chopped)
    1 28 oz. can tomatoes (chopped)
    1 8 oz can tomato sauce
    1-2 tsp. Italian seasoning
    2 tsp. chicken bullion (or to taste)
    olive oil for browning chicken

  • Chop onion and garlic. Rinse and cut up zucchini, celery and bell pepper.

  • Season chicken with salt and pepper. Pour some olive oil in a pan and saute chicken for an few minutes till browned.

  • Place the chicken on the bottom of the slow cooker, and arrange vegetables on top. Sprinkle on 1 tsp of the chicken bullion and some cracked pepper. You can taste and add more when your chicken is almost done.

  • Pour tomatoes and tomato sauce on top of vegetables. Sprinkle on the Italian seasoning. Cover and cook on high for 3-4 hours or low 6-10 hours until chicken tender.

    Very easy! Serve over brown rice and add a side salad for a perfect dinner.
